We fill the highest quality new make spirit into the highest quality casks (ex bourbon barrels and ex sherry casks) before laying them down to mature at Benromach Distillery. After many years the mature whisky is then transferred to a different type of cask for further maturation, or 'finishing' as it is often referred to. At Benromach we carefully assess the types of casks we will use in our finishing programme. The cask must be of the highest quality and the characteristics the cask imparts on the whisky must compliment the unique character of Benromach. The 'finishing' period will vary to allow for the influence of the cask to integrate with the whisky. At Benromach we have released a number of different wood finishes over the years including Port, Tokaji, Sassicaia and Marsala. After the initial period of maturation the whisky is transferred to Marsala wine casks where it is allowed to mature for a further 36 months. Marsala is Sicily's most famous wine producing region. Marsala wine has Denominazione di origine controllata (DOC) status.

Nose: 
Malty aromas now to the fore with delicate peatiness. Subdued fruit notes - soft fruits, peaches and melons. A sweet vanilla note emerges.
Palate: 
Sweet fruits and peat smoke flavours compliment each other. Spices also present, reminiscent of mulled wine. Sweet oak note in the background.
Nose: 
Sweet phenols with herbal/menthol notes. Sweet, fermented fruit aromas develop - ripe apples, grape juice.
Palate: 
Sweet fruits - grape skins followed by a drying smokiness. Toasted malt flavours also present.
